Join us in our annual Alpaca head to tail lunch, that celebrate this amazing Peruvian staple meat.
Alpaca has long been a staple protein of the Peruvian diet but it’s only recently that Alpaca meat has begun to be embraced by Australian diners.
Join Chef Alejandro Saravia for an exciting lunch that will focus exclusively on how to prepare and of course eat Alpaca meat. Farmed at Illawarra Prime Alpaca in Berry NSW, Alpaca has been a best seller at Pastuso’s menu since day one.
Our 6 course lunch includes:
Charqui de Alpaca – Peruvian style jerky served with pickles.
Croquetas de Alpaca – Pulled Alpaca neck croquettes, smoked chilli salsa and emulsify rocoto sauce.
Alpaca tataki – Seared Alpaca loin, master stock ponzu and sweet potato chips.
Alpaca pastrami – Alpaca shoulder pastrami, sauce gribiche.
Costillas de alpaca – Spiced Alpaca short ribs, smoked chill salsa.
Calabaza – Grilled golden nugget pumpkin, celeriac puree.
