HEAD CHEF- DWI AYU

The San Telmo Group is proud to Introduce Dwi Ayu, our very first female head chef for the group, leading the team at Pastuso.

Ayu's career path has been a remarkable journey, having spent many years in an office before taking a leap of faith to explore something new. Joining Pastuso as an apprentice, Ayu, fell in love with the hospitality industry and embraced the opportunity to work from the ground up to reach this prestigious position.

The inspiration behind Ayu's venture into the hospitality industry came after moving to Melbourne, a city that thrives on its diverse and vibrant food culture. Witnessing how various culinary traditions and cultures harmoniously merged together in this melting pot, ignited her passion for food and its origins.

Beyond the kitchen, Ayu, has loves the challenge of hiking and mountain climbing. Each year, she likes to embark on a spiritual journey, to reconnect with herself, find mental clarity, and set new goals.

Working in the hospitality industry brings Ayu immense satisfaction. Her primary goal is to ensure customers feel welcome and have a memorable experience. Witnessing the creativity of her colleagues in action also brings Ayu great joy.

Resilience forms a core value for Ayu, her approach to challenges is always with a positive mindset, always viewing them as opportunities for growth and self-improvement.

Among Ayu's favourite cuisines are the bold flavours of Mediterranean dishes, the freshness of Japanese food, and the spiciness of Balinese cuisine.

Childhood memories of growing up in an archipelago country, indulging in a lot of seafood, are reignited whenever Ayu prepares ceviche. The San Telmo Group are proud to welcome Ayu into her new position and we look forward to watching her succeed.
